ashkenazy jews are eastern european jews who came mostly as refugees for the heavy pogroms in eastern europe and germany to the west. In other words they are specific group of jews. Second, if you are converted to judaism, you ARE a jew..that's why you can convert...

However, not all jewish groups accept converting but most jewish, even many orthodox groups accept it as long as you hold on to the rules. If you say jewish people are only jews when their origin is Israel then there are not many jews left anymore because they are also mixed over the years... such as most ethnic groups...
