In any circumstance Mourinho would eventually push for a goal to go through. This changes nothing because he still only needs one goal. Mourinho is not the type to get carried away. He knows Atletico was waiting for this to counter so he will push an onslaught as long as possible. Right now it is more important not to concede a lethal second goal. Just look at his performance against PSG where he waited a long time.

Yes

Atletico and Chelsea seem equally good at defending when they are ahead or need it. But Atletico seem to function better offensively whereas Chelsea struggle more and often seem to create by forcing it.
